What is recipe costing?

Recipe costing calculates the ingredient cost of a recipe from purchase price, pack quantity and the quantity used in the recipe.

How do I calculate ingredient cost from a pack price?

Cost used equals pack price multiplied by quantity used divided by pack quantity, after compatible unit conversion.

What is recipe yield?

Recipe yield is how many units the batch produces, such as 24 brownies, 12 cupcakes or 2 kg of filling.

What is saleable yield?

Saleable yield is how many produced units you expect to sell after normal loss, trimming or rejects.

What is usable ingredient yield?

Usable ingredient yield accounts for preparation loss. If 1 kg strawberries gives 900 g usable fruit, the usable yield is 90%.

What is food cost percentage?

Food cost percentage is ingredient cost per unit divided by selling price, multiplied by 100.

Why ingredient cost is not the final selling price

Ingredient cost does not include labour, decorations, packaging, rent, taxes, wastage beyond the recipe assumptions, or business overheads.

How packaging affects unit cost

Packaging is a separate per-unit cost. The calculator shows ingredient plus packaging per unit, but does not include packaging inside food cost percentage.

Why ingredient price changes matter

How do I calculate food cost percentage?

Food cost percentage is ingredient cost per unit divided by selling price, multiplied by 100. Packaging is shown separately and is not included in the food cost percentage.

What is the difference between food cost and gross margin?

Food cost percentage compares ingredient cost with selling price. Gross margin compares selling price with a broader cost base and is not calculated by this recipe-costing tool.

How do I calculate cost per portion?

Divide batch ingredient cost by recipe yield. If saleable yield is enabled, the calculator also divides batch ingredient cost by expected saleable quantity.

What is saleable yield?

Saleable yield is the number of units expected to be sold after normal breakage, trimming or rejects. It must be greater than 0 and cannot exceed recipe yield.

How should I account for ingredient wastage?

Open the ingredient's advanced yield control and enter usable quantity from the purchased pack. The calculator uses usable quantity as the denominator.

Should packaging be included in food cost?

This calculator keeps packaging separate from ingredient food cost. It also shows ingredient plus packaging as a supporting percentage when selling price is entered.

Does this calculator include labour?
